  • 100ml (3.4 fl.oz) of warm water
  • 100g (3.5 oz) + 500g (1 lb) of flour, divided
  • 18g (0.6 oz) + 100g (3.5 oz) of sugar, divided
  • 10g (0.35 oz) of fresh yeast
  • 70g (2.5 oz) of butter, melted
  • ½ cup of warm milk
  • 1 whole egg
  • 1 egg white
  • Butter at room temperature, for layering
  • Egg wash for brushing


  1. Begin by dissolving the sugar and crumbling the yeast into the warm water. Mix in the 100g of flour to create a sticky dough. Let this sit for 10 minutes.
  2. In a separate bowl, combine the remaining sugar with melted butter, an egg, and an egg white. Blend in the yeast mixture and the rest of the flour. Knead until you have a smooth dough.
  3. Allow the dough to rest for 1 hour, giving it time to rise and develop flavors.
  4. On a floured surface, roll out the dough into a large rectangle. Slice this into 5-6 strips and generously brush each one with room-temperature butter.
  5. Stack these buttered strips atop one another and roll out again into a rectangle shape.
  6. Cut the dough into triangular pieces and roll them into the classic croissant shape. Place these on a baking sheet, leaving some space for them to expand, and let them rise in a warm spot until they’ve doubled in size, about 30 minutes.
  7. Preheat your oven to 180°C (350°F). Brush the croissants with egg wash for a golden finish.
  8. Bake for 20 minutes or until they’re puffed up and golden brown.
