Simplified Crepes Recipe

Ingredients:

  • 6 Eggs
  • 500g Flour (Type 00)
  • 1 Liter Milk
  • 60g Butter
  • A pinch of Sea Salt

Instructions:

  1. Start the Batter: In a large bowl, whisk together the eggs. Gradually mix in the milk and a pinch of salt until well combined.
  2. Incorporate the Flour: Sift the flour into the egg mixture. Add the melted (and cooled) butter. Stir the mixture vigorously to eliminate any lumps, achieving a smooth and uniform batter. Let this batter rest in the refrigerator for at least 30 minutes to ensure it’s well-set.
  3. Cooking the Crepes: Heat a 20cm non-stick frying pan over medium heat and lightly coat with butter. Pour a small amount of batter into the pan, tilting it to spread the batter thinly and evenly across the surface.
  4. Flip and Finish: After about a minute, once the underside of the crepe turns golden brown, carefully flip it to cook the other side. Each side should take about a minute to cook to perfection.
  5. Serving Suggestions: Crepes can be enjoyed both hot and cold, filled with your choice of sweet or savory fillings. They can be folded in half, quarters, or rolled up.

Storage Tips:

  • For Later Use: If not using immediately, store the cooked crepes in the refrigerator. They keep well for up to two days. The batter, however, should be used within ten hours for the best quality.
