One-Pot Black Pepper Chicken 1

Ingredients

  • 1 lbs Chicken Breasts (Boneless-skinless / Cubed)
  • 1 Red Bell Pepper (seeded and cut into strips)
  • 1 tsp Black Pepper (Cracked)
  • 1-inch Ginger Root (Peeled and chopped)
  • 2 cloves Garlic (Peeled and minced)
  • 3 tbsp Soy Sauce
  • 3 tbsp White Vinegar
  • 1 tbsp Honey
  • 2 tbsp Olive Oil

Instructions

Step1: In a medium-sized bowl whisk together half of the soy sauce (1 ½ tbsp), half of the vinegar (1 ½ tbsp), and the honey.

Step2: Add the cubed chicken to the sauce and toss to coat. Marinate inside the refrigerator for at least 30 minutes.

Step 3:  In a large skillet add olive oil and heat to medium-low. Add the garlic and ginger and cook for 30 seconds or until garlic is golden. Mix together and make sure not to burn the garlic and ginger mixture.

Step4:  Add the marinated chicken with the sauce and cook for 3 minutes.

Step 5: One chicken is cooked, add the bell pepper strips along with the remaining soy sauce, vinegar and black pepper. Stir and cook for 10 minutes until peppers
have softened.

Step6:  To serve, spoon chicken over or alongside brown rice or quinoa.
