Ingredients of the method of making fried green tomatoes:
° 2 liters vegetable oil, for frying
° ½ 1 cup all-purpose flour
° 1 teaspoon kosher salt, with an extra amount for spraying
° ½ 1 teaspoon fresh black pepper
° ½ cup buttermilk
° 4 large eggs
° 2 cups yellow cornmeal
° 1 cup rusk bread crumbs
° 4 green tomatoes (about 1 pound), sliced 14 inch thick

How to make fried green tomatoes:
1- For green fried tomatoes: pour the vegetable oil into an oven frying pan or deep saucepan and set the thermometer in it. Heat oil on medium heat to 340 degrees F . Line an oven tray with paper towels and place them on a cooling rack.
- Prepare 3 dishes, add to the first dish: flour, salt and black pepper and stir well. On the second dish, whisk the milk with the eggs. On the third plate, add the cornmeal and rusk.
3- Using one hand, dip the tomato slices in the seasoned flour on both sides, then shake each piece to get rid of any excess flour.
4- Then, using the other hand, place the tomato slices in the egg mixture, and leave them slightly over the bowl to allow any additional eggs to spill.
- Using your first hand, cover the sliced tomatoes in the rusk mixture evenly on both sides of it.
- Divide the tomatoes into, and gently put the tomatoes in the hot oil. Fry until dark golden and crunchy, about 30 seconds per side. Transfer the tomatoes to a cooling rack, then sprinkle each slice with more salt.
