For a satisfying brunch, try these tender potato slices with lots of sausage and cheese. I never have to worry about leftovers with these tasty potatoes

Easter was coming around again.

I can’t believe how fast the years go by anymore. It seemed like when I was in school, the days, weeks, and months just dragged on and on. Now that I have kids of my own, every time I turn around they are ending a school year and starting another one. It just goes to fast. Spring or Easter break was upon us though, although I felt like we just got done with Christmas…so I had to come up with another dish to take to our family dinner.

I was usually pretty boring and took something like cocktail wieners, but this time I wanted to expand my horizons. When I was looking around on, I found this recipe for sausage and potatoes. It said it was “Stupid Easy” so I knew it was right up my alley. I’m not much for cooking, my husband usually takes care of that.

With only five ingredients though, I figured I couldn’t mess it up. They turned out wonderfully. I barely got them to dinner without eating them all. Everyone that tried some enjoyed them too. I didn’t even have any leftovers to take home. Bummer.

To Make this Recipe You’Il Need the following ingredients:


14 oz. smoked sausage, sliced
2 lb. russet potatoes, cleaned & sliced
1/2 medium onion, sliced or diced
1 Tablespoon olive oil or bacon fat
1 1/2 teaspoons sage
1 clove garlic, minced
dash cayenne or hot sauce (opt)


*In a large skillet heat olive oil over medium high heat , add in sliced potatoes. (You can lay them out flat to get more crispy on each side, If you do this it will take about 10 mins to cook on each side. And I usually use 2 large skillets for this to make it go faster. Or you can just throw them in the pan stir them around it will give you more of a softer potato.) Brown potatoes, stirring occasionally.
When potatoes are about 85% done or your last 5 minutes of cooking add sausage, onion, garlic, sage, and hot sauce.
Reduce heat to medium, and cook until sausage is heated and the onions are soft. You want about a 60/40 ratio with potatoes and sausage
