  • Sugar, 18g (0.6 oz) for the starter; additional 100g (3.4 oz) for the dough
  • Fresh yeast, 10g (0.3 oz)
  • Melted butter, 70g (2.3 oz)
  • Warm milk, ½ cup
  • 1 whole egg
  • 1 egg white
  • Butter at room temperature, for layering
  • Egg wash for brushing


  1. Begin by dissolving the sugar and crumbling the yeast into the warm water. Mix in 100g of flour to create a sticky dough. Let this sit for 10 minutes.
  2. In a separate bowl, blend the remaining sugar with melted butter, an egg, and an egg white. Incorporate the yeast mixture and the rest of the flour. Knead until you achieve a smooth dough.
