Ingredients :
1 cup all-purpose flour
1/2 tsp. baking soda
1 tbsp. apple pie spice
1/4 tsp. salt
1/2 cup unsalted butter, softened
1 tsp vanilla extract
3/4 cup brown sugar
1/4 cup sugar
1 large egg, room temp
1 1/2 cups old-fashioned oats
1 cup gala apple peeled, cored, and chopped into small pieces
Instructions :
Prepare your apples and set to the side on a paper-towel covered plate.
Allow the excess mositure to drain from the apples.
Using a stand mixer attach the paddle attachment.
Now add the butter, brown sugar, and beat until smooth.
Add in the egg, and vanilla, making sure to mix well after each ingredient.
Set to the side.
Sift together the flour and baking soda.
Add the sugar, pie spice, oats to the flour mixture and stir to combine.
Slowly add the flour mixture to the wet ingredients and mix until just combined.
Add the chopped apple to the cookie mix and stir until fully combined.
Cover and refrigerate the dough for 1 hour.
Preheat oven to 350 degrees.
Line baking sheets with parchment paper.
Once ready to bake using a small ice cream scoop, scoop the dough onto the prepared baking sheets.
Baked for 12-14 minutes.
Remove from the oven and allow to cool.
