- 1 (15 ounce) can Chickpeas (garbanzo beans), drained and rinsed
- 1 cucumber, sliced and quartered
- 1 cup cherry tomatoes, chopped
- salt to taste
- 1/4 cup Italian dressing
- Optional: fresh parsley, feta cheese
- Combine Chickpeas, cucumber, tomatoes and Italian dressing.
- Top with feta cheese and fresh parsley if desired.
- Refrigerate for at least 1 hour before serving.
