EASY 4-INGREDIENT CHICKPEA SALAD


Ingredients

  • 1 (15 ounce) can Chickpeas (garbanzo beans), drained and rinsed
  • 1 cucumber, sliced and quartered
  • 1 cup cherry tomatoes, chopped
  • salt to taste
  • 1/4 cup Italian dressing
  • Optional: fresh parsley, feta cheese

Instructions

  1. Combine Chickpeas, cucumber, tomatoes and Italian dressing.
  2. Top with feta cheese and fresh parsley if desired.
  3. Refrigerate for at least 1 hour before serving.
