2 cups diced tomatoes
1+1/2 c diced cucumbers
1/4 – 1/3 c diced onion of your choice, even green onion
optional 1c thawed frozen corn
1 Tbsp chopped parsely or cilantro
1/4c italian dressing
4 tsp sugar
1/4 tsp Pepper
In a bowl put your chopped veggies plus parsley/cilantro.
In a small bowl mix very well dressing and sugar (the sugar helps with the acidity of the tomatoes a bit, the sharpness of the dressing and the bite of the onion).
Pour over veggies add pepper and mix well,
Refrigerate for at least 2 hours (1/2 way), mix before serving
