i was raised in West Texas and lived there for a good part of my adult life. Anyone raised there knows that there is no Mexican food like West Texas Mexican food. While living in Alaska, I couldn’t find decent Mexican food, so I learned to cook my own. One of my favorite dishes is carne guisada and fresh flour tortillas—easy to come by back home. I recently left Texas again for North Dakota. And wouldn’t you know it there are no decent Mexican restaurants where I am. So when I need a taste of home, I cook up a pot of this dish.
3 lbs stew meat
1 tablespoon oil (lard, bacon grease, etc)
1 medium onion, diced
1 small green bell pepper or jalapeño, diced (or some of both)
3 tablespoons tomato sauce
1 teaspoon garlic powder or 3 cloves of garlic, minced
2 teaspoon ground cumin
2 teaspoons salt
½ teaspoon black pepper
2 tablespoons all-purpose flour
1 cup chicken stock
